Here is the delicious seasoning that was used on the pork: Chimichurri. According to the trusty ol’ Wikipedia, its name is Basque although it was invented in Argentina and Uruguay by settlers from the Basque Country, less than 30 minutes from Pamplona, Spain where I first tried it.
